Make sure you understand why they don’t want you to leave the country. You could be opening your employer (or yourself) up to trouble.
They may have signed a contract committing to performing all work and/or retaining all data within your country.
This can happen because of privacy laws or because classified systems are involved. Running afoul of those laws can get you sued or even jailed so make you understand the requirement.
Yeah, but most likely your corporate phone GPS location will give your location away.
If you used VPN on all the devices, all the time they could check who is the owner of the IP, but not likely to do it. And even if they did, you can say something like “yes, I used VPN to access corporate resources for security reasons, I was working from a public network like Starbucks”.
better way would be if you could VPN to your home network, then access work systems from there. Or even better remote desktop to a machine at home that you use regularly for work.
Yes they could, they can easily see who owns the IP address and see that it belongs to a datacenter and not a residential provider.
Hold on, are you using a company phone or a company laptop and are you physically taking those devices out of your companies home country?
If so… then this could be far more then just worrying about your employer noticing, this could be about international trade laws, security, etc. Coming from the USA, if I have a corporate asset there is a whole plethora of things that we have to do in order to remove it from the country.
In the event that you get „officially“ noticed (accident → hospital) by the entities of the foreign country you might get not only fired but als legally prosecuted. Worst case scenario. All in all this might be unlikely, but still possible. Your own choice, your own risk.
I have done it using a VPN on a computer, i made it look like I clocked in while in China and then at the end of the day clocked out in Russia. The data did not show otherwise. Cell Phone on the other hand requires the use of more than a VPN, but still possible.
I understand, I wanted to know if there was a perfect way to spoof my location (which apparently doesn’t work with VPN).
Maybe I could set up a remote system where I have a PC running in my home country at all times and I connect to it with my laptop?
This is the only foolproof way: you’d still be working from home after all, you’d still be proveably a resident of where you pretend to be.
I won’t add to the multiple warnings on the legal responsibility of faking your location, but keep in mind that the pandemic is far from over, and new travel restrictions can happen at any moment - what if you’re locked away for an extended time?

Even so, this is not evidence of your location. There are enough good reasons to use a VPN, that no one should assume that just because you are on one, you must be on the other side of the earth. In fact, if my employer said that I was forbidden from using VPN, I would ask why doesn’t he care about my privacy?
No, I am using my own computer to work for them. But I am logging into their system which can track my IP.

If you are looking for GPS spoofing, the only VPN I can think of is Surfshark. They offer a feature to spoof your GPS, however only on android. If you have an iPhone, I’m not sure. Also check to see if Surfshark has a VPN server in your country.
From a technical perspective this would work, but as others have said the implications are potentially huge
Yes, that would alleviate some security concern, since the data is staying on that machine. Doesn’t sound like the company is very strict with data security if they are letting you use your own computer on your network.
Just make sure you have a buddy who can reset your network etc if it goes offline when you are out of town.
Even so, this is not evidence of your location.
I never said it was, I was just stating that it could look suspicious.
Then I would not worry about GPS location but worry about IP tracing instead, as others have said. It is easy to find that they are attached to NordVPN.
The question becomes, what would they do if they do have a know policy against using a VPN? But like others have said, securing your connection on a public access point could be your reason/response.
