Matrix/mautrix-whatsapp is great but its too complicated, setting up a server and keeping it online. Only got one device to work with for this mission and that’s the one WhatsApp will be used on.

Pretty much impossible to achieve this. You can try using Session app, it is built for privacy. You don’t need a phone number to register, you are given with a session ID which is just like your virtual phone number. However you will need to convince your friends and family to switch to Session so, good luck with that.
Best way to use Whatsapp privately is to ditch it and use Signal.
Ive gone down this road before. Only realistic way is a cheap whatsapp only phone but Meta will know its you based on the numbers you frequently interact with. How? Your non privacy friends will have your number saved in their contact list with your name.
Before doing a bunch of implementation work, make sure you really understand the problem you are trying to solve.
Keeping your identity (or location, or whatever) secret from the person you’re talking to is a different problem than keeping it secret from the phone company which is a different problem than keeping it secret from the GRU.
You don’t get to keep everything secret from everybody so you need to figure out what is most important.

I understand that. My goal is to isolate and contain WhatsApp. A perfect scenario would be whatsapp on a dedicated phone and network with VPN. I’m trying to achieve that level of isolation using WhatsApp on one phone.

You can’t expect some little tweak to fundamentally change the way technology operates.

Privacy is incredibly hard on the internet, on purpose. Even when you specifically choose tools (supposedly) designed for user privacy from the beginning.
What’s app is going to collect your data that’s why no security expert will suggest you to use whatsapp for privacy. You can hide your IP address using VPN though, but can’t say much about hiding other data.
I stopped using whatsapp personally back in 2021 when the terms changed, but I have it on a work only phone without any personal identifying apps (fb, insta) or personal contact numbers. My number is a corporate registered one not tied to my identity. Imo thats the only way to isolate whatsapp.
Except it’s not. The comment you linked to describes an implementation but not the problem you are trying to solve.
To know whether the implementation makes any sense, you’ve got to know why you’re doing it. That means asking yourself:
- What is the information I want to protect?
- Who am I protecting it from?
- What might happen if my protection fails?
Once you know those answers, you can look at a potential solution like isolating WhatsApp and know whether it actually solves your problem and whether doing so is worth the effort.
Until you have clear answers to those questions, talking about a particular implementation is a waste of time.
