It wouldn’t be hard to correlate. They know where that phone went on that visit. They know what you purchased, so they can match your purchase with the phone that visited those areas. And as someone else pointed out they’re using facial recognition for loss prevention now, no reason to think that’s all it used for. So your face can be used to tie you back together with all your previous visits.

At best they could correlate the purchase with a random MAC address that will never show up again. And the method isn’t precise enough to pinpoint exactly where in the store the phone went (that’s why they came up with the BT beacons).
Cameras are indeed a bigger risk. They don’t even need facial recognition. For example, Amazon recognizes the body and gait in their “pickup and go” stores. And they know exactly where you went, what you looked at, and what you picked up. AI will make this kind of thing more and more inescapable.

Not to mention, video footage can capture your entire activity. That’s one of the pieces of evidence against the Long Island serial killer - video footage of him reupping his burner phones minutes. They also pulled the location info on all his phones for at least the last 10 years. He didn’t use the burners from home or work, but they noted that whenever the burner called from NYC his phone was at work within a mile, and i believe the same situation when he was home.
